Industrial Chillers are versatile refrigeration machinery used to cool liquids (usually a glycol/water mixture) that circulate to regulate the temperature of many different processes: distillation columns, coolers, heat exchangers, fermenters, etc.
When controlling temperature and time is the most important thing in your process, an industrial chiller will provide a constant supply of coolant for the job.
Your cooler provides coolant to condense the vapors in the still and cool the mashed potatoes from the heat of the cooking process. Historically, water was used to cool the stills - and in a few select stills this continues to this day.
Most people are turning to coolers these days due to their fast cooling capabilities as well as water saving features. The cooler allows the glycol/water mixture to run in a closed loop, which means there is no waste. Also, the faster the syrup cools, the less likely it is that bacteria will grow.
What should I pay attention to when buying a chiller?

First, make sure that the chiller you are installing has an adequate heat load. Also known as cooling capacity, heat duty is the rate at which a chiller cools the process fluid.
We don't expect you to know how many BTU/hr or kW you need to maintain (we're going to help you here), but not all coolers can withstand the extreme temperature swings used in the distillation process. Rapid cooling of 150°F mashed potatoes to 80°F prior to fermentation can cause stress in incorrectly sized coolers
How to choose the right cooler?
Each winery we work with is unique and requires a different production schedule, space requirements and plans for future growth. Once you have determined the size of your still and mash oven, we can begin to help you design your winery cooling system.
Knowing when your equipment is operating will also go a long way.
